Dairy calcium is biologically available, meaning you absorb what’s in the product.” The way around this, she adds, is to “make sure you’re varying your sources.” While nothing can undo the effects of these compounds, in general, vitamin D helps your body absorb calcium—so make sure you get enough of this, too. (The government recommends 15 micrograms of vitamin D per day.)

This study examined the effects of vegetarian and meat-based diets on phosphorous levels in nine patients with chronic kidney disease (CKD). Each patient ate a vegetarian or meat-based diet for one week and then waited two to four weeks before eating the other diet for a week. The researchers conducted blood and urine tests at the end of each week on both diets. Even though the two diets had equivalent protein and phosphorus concentrations, patients had lower blood and urine phosphorus levels after they ate the vegetarian diet.

“Orthorexia boils down to someone who is very, very concerned with eating what they consider the perfect diet,” says Joy Jacobs, a clinical psychologist with the University of California-San Diego School of Medicine. “This is someone who takes healthy eating to an extreme and feels good about it. These people often have a sense of moral superiority.” While others abuse their bodies, they know better.

“As it becomes more and more restrictive, it begins to interfere with your quality of life and your wellness,” says Sondra Kronberg, cofounder and nutritional director of the Eating Disorder Collaborative Nutrition Counseling Specialists of New York. “It starts controlling you, and you become trapped in this very narrow vision.”

Researchers at Carnegie Mellon University in Pittsburgh split 51 hungry undergraduates into two groups. Half imagined eating 30 M&M’s and inserting three quarters into a coin-operated laundry machine; the other half pictured eating three M&M’s and inserting 30 quarters. Afterward, they were all presented with a bowl of the colorful candies and were welcomed to indulge as they wished. The students who had imagined eating lots more M&M’s ate roughly three pieces on average, while the other group averaged five. Researchers found a similar pattern when they tempted the students with cheese cubes. The study, though small, may have implications for weight loss, say psychologists: Thinking about your meal before sitting down may prevent overeating and help to manage mid-day cravings.
